The SteakAger is a unit that allows users to dry age steaks in their refrigerators. The specialized box fits in the refrigerator and allows the user to dry age beef just as the best restaurants do. “Dry aging delivers unmatched flavor and tenderness that marinating cannot supply,” notes the creator. “Up until now, there has not been an affordable and safe way to do it at home, so we decided to create the SteakAger.”
One of the biggest problems with aging beef is the cost and space consumption. The SteakAger isolates beef while aging it safely. Users can buy a cut of beef at the local butcher or store, load it into the SteakAger unit and allow it to dry age. Dry aging is the process of driving out the moisture and allowing the enzymes to tenderize the meat and to oxidize the fat. The SteakAger will work with New York strip, tenderloin, t-bone, ribeye and sirloin tip, as well as other cuts of beef.
Dry aging typically leads to beef that costs at least $35 per pound due to the space and time necessary to complete the process. Now, anyone can dry age steaks for a cost of as little as $4 to $12 a pound and for between 12 and 70 days.
The SteakAger box is made of high-density, food-grade cutting board material. It sits on the fridge shelf and is powered by a 12-volt DC power pack plugged into a wall outlet. The unit duplicates the environment of the walk-in dry-aging refrigerators used by great steakhouses. It includes a circulating fan for drying, a Himalayan salt satchel to add flavor, a germicidal UVC lamp, a humidistat and an exhaust fan as well as an activated carbon filter to avoid smells inside the refrigerator.
