Hernández has over 20 years of experience in the American culinary industry. His “works of art” are famous for reinventing Asian cuisine through its fusion with Latin flavors, creating the best and most original recipes.
He is a professional lawyer, but a chef and artist at heart. Hernandez studied law in Venezuela, but after settling himself in the US, he decided to take a leap of faith and bet on his dream of studying culinary, a dream that he was able to achieve with the help of the very best in the industry: Plaza III Steakhouse, Sysco, among others.
Along with his siblings, Daniel and Matías, Edixon created Crudos Fusion Art, a restaurant located at the heart of Wynwood, a place that is well-known for its urban art and for having the best food.
“We don’t sell food, we sell experiences”, Edixon Hernández says.
They offer innovative and delicious creations such as the Ramen Burger, a beef patty filled with goat cheese, spicy mayonnaise, and caramelized onions sandwiched between two pan-fried discs of ramen noodles; Crudos Rolls, tasty rolls stuffed with tuna, tempura shrimp, crab salad, salmon, avocado, yellow pepper, truffle oil, cream cheese, and eel sauce; and finally, the mouthwatering Cloud Pork Belly, pork cuts that are cooked for around 48 hours with multiple ingredients, mixing sweet and salty flavors. All of these are a few of the dishes that have taken Wynwood at another level.
Cloud Pork Belly stands out due to its artistic presentation, being covered in cotton candy. Crudos Fusion Art accentuates the fusion of sweet, bitter, spicy and sour flavors, having the most explosive roll of all of Miami, the Pop Roll, which is famous for exploding in your mouth, providing an unforgettable and unique experience.
On the other hand, when it comes to drinks, the tropical flavor of the delicious Mojito Passion Fruit is accompanied by a popsicle made out of sugar cane, just like the mojito. “The key is to never give up. I must admit that many times, I have been close to throwing in the towel due to exhaustion; however, I always manage to say no and keep going. This is an exhausting job, but it is my passion and the work I love and enjoy. Therefore, I must keep on cooking, creating, and innovating, because I know that I can do it. Making your dreams come true takes time, but it is possible”, says Edixon.
