Bread and Honey Café, a restaurant that’s markedly different from others in terms of quality and customer care, has come up with a honey pie that’s remarkably different and unique in its taste and presentation. The restaurant owners believe it is the best honey pie that customers can get in Oregon.
“Our browned butter honey pie has the consistency of a pumpkin pie but with a very different flavor,” says Chef/Owner Dyani Walden who has worked in restaurants since she was 17. “The nuttiness of the brown butter, the sweetness of the honey combined with salt, vanilla, and white vinegar make this recipe truly surprising. With all the sweetness coming from honey this pie is quick and easy to make with no refined sugar.”
The Bread and Honey Cafe was started by two Oregonians, Dyani Walden, and Trevor Rhoads. They wanted to build a neighborhood cafe where people could come, enjoy simple food, and leave happy.
Chef Walden has served as a chef from California to Alaska, and from fine dining restaurants to a vegan bakery. She learned how to respect and love a busy and well-organized kitchen from her experience. However, she loves the freedom and simplicity of running a small café. The Bread & Honey Café is a culmination of her 20 years of cooking experience and her vision of a wholesome and friendly café.
“If we can make and serve good simple food, with people that we care about – to people that we care about, then we haven’t just created a good job, we have created a good life,” says Dyani explaining the motto of their restaurant.
Trevor began cooking while still in Oberlin College in the Co-Operative Dining Halls. After graduating, his passion for simple, healthy food took him to the Food in Bloom Catering. He began as an unseasoned prep cook, graduated to become a sous chef and manager alongside Dyani. At the Bread & Honey Café, Trevor enjoys making simple, healthy food. He believes it can have a profound influence on people’s lives and the community.
The Honey Pie is one specialty of Bread and Honey that’s in huge demand all-round the year. Their house flavor is lemon curd and fresh thyme, but they offer many holiday flavors that are just as delicious.
