Lisa Stalvey-Coady’s new gluten-free, healthy, and easy-to-prepare cookbook, The Thoughtful Chef, is unique as it offers amazing combinations of flavors in her recipes, healthy and clean ingredients, and recipes that are easy to prepare so you can be a healthier you without dieting. These are well-thought-out dishes and are an accumulation of recipes Lisa has created over the last 20 years of catering. Her company, The Malibu Chef has been very busy since the beginning of 2022 and has been different than the past years. Her clients seem so grateful to gather with their friends and enjoy themselves more than ever since the Covid- 19 restrictions.

My step-grandson Coady had his first birthday party in May, so my stepdaughter threw him quite the party he hopefully will remember later! It was Mexican-themed, complete with an authentic taco bar with chefs preparing and cooking the meat, chorizo, (both vegan and regular), and chicken in her and her partners’ quaint backyard. A mariachi band of 3 playing guitar and singing greeted the guests as they came in. There was a donkey to take pictures with, which Coady enjoyed! My official name as one of Coady’s grandma is ‘grand dude’! Everyone calls me ‘dude’ or ‘dudette’, so it seemed fitting! I had the honor of making Coady his first sugar, egg, and gluten-free ‘smash cake’ made with bananas and covered with vanilla cream cheese frosting topped with chopped strawberries and bananas. His face was covered in the cake as he demolished it!

And recently, I catered an elopement that is as special as a wedding. Love was to be had everywhere up in the hills of Malibu. They had a pale pink theme in which I matched it with a dragon fruit lime skinny margaritas when they sat down for a 4-course dinner that was a hit. Appetizers included a gin and tonic cured smoked salmon salsa mixed with dill, crème fraiche, avocado, and onion on cucumber slices. The 1st course was Sunomono salad with yuzu Furukaki topped with seared scallops drizzled with ponzu lime butter. Following the scallops was a salad with arugula, blackberries, avocado and pine nuts, and finally, Brazilian marinated filet mignon with truffled mashed potatoes and roasted asparagus.
